ack! i don't know of many off the top of my head. i am still a big ol' novice, you know.
but i did learn how to make sweet onions, and it's really easy.
-2 or 3 large red onions, chopped into large chunks and seperated layers
-1/2 c. extra virgin olive oil
-1/4 c. balsalmic vinegar
-1 tbsp honey
-1 tsp freshly ground pepper
preheat oven to 250 degrees.
combine ingredients in a bowl and mix with your hands, coating the onions in the mixture.
pour out into a 9x9 baking pan (i used a pie plate). they should be heaped, NOT spread in a single layer.
bake for 3 hours, every 30 minutes returning them to the bowl to be retossed and repiled into the pan.
they will keep indefinitely in the fridge. tasty condiment for sammiches, omelettes, burgers, etc.
